Lo-cal Hero: Asparagus, Pea and Mint Salad

60g Apsaragus

60g Sugar Snap Peas

60g Frozen Green Peas

1tsp mustard

1/2 lemon zest and juice

1 tbsp fresh mint - roughly chopped

3 Tbsp olive oil

1 Tbsp maple syrup

  1. Blanch asparagus for 2-3 minutes, drain and place in a bowl of cold water.
  2. For the dressing, add olive oil, lemon zest and juice, mustard and maple syrup (or honey) into a jar and shake until emulsified.
  3. In a serving bowl, add asparagus, peas and sliced sugar snap peas, drizzle with half the dressing and toss.
  4. Dress with mint and drizzle more salad dressing if you like. Enjoy!
