Zesty Salmon and Watercress Poke Bowl

This light salad is packed with goodness! Lean protein and our green ‘superfood‘ Watercress, paired with orange, make a quick-to-make and very healthy option, ideal for a hot summer day!

2 tbsp extra virgin olive oil

100g Sushi grade salmon (or smoked salmon)

2 oranges

salt and pepper

  1. Thinly slice salmon or separate the slices if using smoked salmon and marinade it in juice of one orange for several minutes.
  2. In the meantime, wash and dry Watercress and place in a bowl.
  3. Peel and cut segment out the remaining orange, preserve the juices.
  4. Arrange salmon on top of Watercress, add orange segments and sprinkle sesame seeds as generous as you like.
  5. Make a quick dressing with orange juice from segments, mixed with olive oil and salt and pepper. Pour over your dish and enjoy!

Delicious, light, zesty and very nutritious!

If you want to make a more substantial meal out of it, add some fluffy basmati rice!
