Watercress & Citrus Salad

1 avocado, sliced

90ml extra virgin olive oil

30ml apple cider vinegar

Juice of 1 lime

1 pink grapefruit, peeled & sliced

1 orange, peeled & sliced

1/4 cucumber, sliced

3-5 tbsp pomegranate seeds

1/2 tbsp honey

salt and pepper

  1. In a small bowl or jug, whisk together the olive oil, apple cider vinegar, juice of 1 lime, honey, salt and pepper to make the vinaigrette.
  2. In a large bowl, pour half of the vinaigrette over the watercress and toss well to coat. Transfer the watercress to a serving dish (or leave in a large bowl).
  3. Add the grapefruit, orange, cucumber, and avocado to the dressed watercress then drizzle over the remaining dressing.
  4. Finally, scatter over the pomegranate seeds and serve.

When divided into a single serving, this recipe approximately yields 767kcal, 6g of protein, 72g of carbs, 55g of fat with 7.5g of that being saturated fat.
