The Energiser: Warm Sweet Potato and Pearl Barley Salad

This comforting, warm salad of sweet potato, barley and our signature Energise SuperMix is full of fibre and protein.

1 Sweet potato

50g Pearl Barley

1tsp cumin

1tsp paprika

Olive Oil

1 tps balsamic vinegar

3 Tbsp olive oil

Salt & Pepper

1 tbsp lemon juice

  1. Preheat the oven to 200 degrees.
  2. Simmer barley in 200ml water for 20 mins until cooked but chewy. Add a little more water if needed.
  3. Peel sweet potatoes, cut them into chunks, drizzle oil and sprinkle on spices and seasoning. Toss to combine and roast for 20-25 mins.
  4. In a large bowl, whisk together olive oil, balsamic vinegar and lemon juice.
  5. Wash and dry Energise SuperMix, add to bowl along with barley and sweet potato.
  6. Season, toss and serve immediately.
