Snack Lettuce Quick Satay Chicken Cups

Preparation time: 10 minutes

3 tbsp crunchy peanut butter

100g yoghurt

1 tbsp soy sauce

200g cooked chicken, sliced

Small bunch of coriander

1 deseeded red chilli, sliced

1 lime, wedged

1 tbsp mild curry paste

  1. In a small bowl, mix the peanut butter, curry paste, yoghurt and soya sauce. Set aside.
  2. Arrange the snack lettuce leaves on a serving platter and add the chicken slices.
  3. Spoon the satay sauce over the chicken and top with chillies and coriander.
  4. Serve with lime wedges.
