Snack Lettuce Quick Satay Chicken Cups

3 tbsp crunchy peanut butter
100g yoghurt
1 tbsp soy sauce
200g cooked chicken, sliced
Small bunch of coriander
1 deseeded red chilli, sliced
1 lime, wedged
1 tbsp mild curry paste
- In a small bowl, mix the peanut butter, curry paste, yoghurt and soya sauce. Set aside.
- Arrange the snack lettuce leaves on a serving platter and add the chicken slices.
- Spoon the satay sauce over the chicken and top with chillies and coriander.
- Serve with lime wedges.
