Mighty Light: Hummus Salad Bowl

1/2 lemon zest and juice
3 Tbsp olive oil
1 Tbsp maple syrup
- Bring a pot of water to boil over high heat. Gently lower eggs into the water and cook for 7 minutes, then transfer to a bowl of ice water.
- For vinaigrette, blend together olive oil, lemon juice and zest, mustard and maple syrup in a large bowl. Toss Mixed Leaves into it until nicely coated.
- To serve, swoosh the hummus onto the side of the bowl, add dressed Mixed Leaves and egg cut in halves. Season with sea salt. Sprinkle some sunflower seeds on top for extra crunch.
