Kale & Sausage Stew

1 large onion, diced

6 plant-based sausages

3 strips lemon zest

1 tsp fennel seeds

1 bay leaf

1 tin chopped tomatoes

500ml vegetable stock

2 cloves garlic - minced

Salt & Pepper

  1. Heat a large pan over medium heat. Once hot add a drizzle of oil, the onion, and a sprinkling of salt and pepper. Cook for 5 minutes, or until the onions are tender, stirring occasionally.
  2. Cut the sausages into pieces before adding them and cooking until brown all over.
  3. Add the garlic, lemon zest, fennel seeds and bay leaf. Cook until fragrant, for 1-2 minutes.
  4. Pour in the chopped tomato and stock, then bring to a boil over a medium-high heat. Reduce the heat to a simmer and leave to cook for about 20 minutes, stirring occasionally, until sauce has thickened.
  5. Stir in a large handful of kale and cook for a further 5 minutes. Taste for seasoning and add salt and pepper if needed.
  6. Serve with crusty bread.

When divided into 4 portions, each serving contains approximately 20g of carbs, 5g of fat, 7.5g of protein and 165 kcal.
