
Kale & Sausage Stew

1 large onion, diced

6 plant-based sausages

3 strips lemon zest

1 tsp fennel seeds

1 bay leaf

1 tin chopped tomatoes

500ml vegetable stock

2 cloves garlic - minced

Salt & Pepper
- Heat a large pan over medium heat. Once hot add a drizzle of oil, the onion, and a sprinkling of salt and pepper. Cook for 5 minutes, or until the onions are tender, stirring occasionally.
- Cut the sausages into pieces before adding them and cooking until brown all over.
- Add the garlic, lemon zest, fennel seeds and bay leaf. Cook until fragrant, for 1-2 minutes.
- Pour in the chopped tomato and stock, then bring to a boil over a medium-high heat. Reduce the heat to a simmer and leave to cook for about 20 minutes, stirring occasionally, until sauce has thickened.
- Stir in a large handful of kale and cook for a further 5 minutes. Taste for seasoning and add salt and pepper if needed.
- Serve with crusty bread.
When divided into 4 portions, each serving contains approximately 20g of carbs, 5g of fat, 7.5g of protein and 165 kcal.
