Kale and Apple Salad with Apple Cider Vinaigrette

2 sweet apples

100g pomegranate seeds

50g toasted mixed seeds

60ml apple cider vinegar

1tbsp Dijon mustard

1 tbsp honey

salt and pepper

90g extra virgin olive oil

100g feta

  1. Finely chop the kale then transfer to a large bowl.
  2. In a small bowl or jug, whisk together the vinaigrette: mix extra virgin olive oil, vinegar, honey, mustard and salt and pepper.
  3. Pour half of the vinaigrette over the kale and toss well for 1-2 minutes, this will help soften the kale. Set aside.
  4. Remove the cores from the apples, discarding them, then dice the apple.
  5. Add the diced apple to the kale along with the remaining ingredients.
  6. Dress with the remaining vinaigrette and toss well to combine, then serve.

A wonderful salad that tastes like summer any time of the year!

Let kale sit in the dressing for a while to soften the leaves.
