Kale and Apple Salad with Apple Cider Vinaigrette

2 sweet apples
100g pomegranate seeds
50g toasted mixed seeds
60ml apple cider vinegar
1tbsp Dijon mustard
1 tbsp honey
salt and pepper
90g extra virgin olive oil
100g feta
- Finely chop the kale then transfer to a large bowl.
- In a small bowl or jug, whisk together the vinaigrette: mix extra virgin olive oil, vinegar, honey, mustard and salt and pepper.
- Pour half of the vinaigrette over the kale and toss well for 1-2 minutes, this will help soften the kale. Set aside.
- Remove the cores from the apples, discarding them, then dice the apple.
- Add the diced apple to the kale along with the remaining ingredients.
- Dress with the remaining vinaigrette and toss well to combine, then serve.
A wonderful salad that tastes like summer any time of the year!
Let kale sit in the dressing for a while to soften the leaves.
