Griddled Snack Lettuce with Parmesan and Lemon Dressing

Preparation time: 5 minutes

Cooking time: 6 minutes

30g finely grated parmesan

1/2 lemon

2 tsp olive oil

salt and pepper

  1. Trim the stalk of the snack lettuce and cut in half length ways. Brush the lettuce all over with oil and season.
  2. Heat the griddle or frying pan and cook, cut side down for 1 minute until they start to char. Turn the lettuce over and cook each side of the curved back of the lettuce for 1 minute. Repeat the process of charring on all sides.
  3. Remove from the grill and squeeze over the lemon juice. Sprinkle with the parmesan and black pepper, ensuring it falls in between the leaves to the centre of the lettuce.
  4. Serve immediately.
