Griddled Snack Lettuce with Parmesan and Lemon Dressing

Cooking time: 6 minutes
30g finely grated parmesan
1/2 lemon
2 tsp olive oil
salt and pepper
- Trim the stalk of the snack lettuce and cut in half length ways. Brush the lettuce all over with oil and season.
- Heat the griddle or frying pan and cook, cut side down for 1 minute until they start to char. Turn the lettuce over and cook each side of the curved back of the lettuce for 1 minute. Repeat the process of charring on all sides.
- Remove from the grill and squeeze over the lemon juice. Sprinkle with the parmesan and black pepper, ensuring it falls in between the leaves to the centre of the lettuce.
- Serve immediately.
