Greek Feta and Griddled Pitta Salad

Preparation time: 10 minutes

12 cherry tomatoes, halved

1/2 cucumber, sliced

50g pitted black olives

4 pitta breads

juice of 1/2 lemon

2 tbsp extra virgin olive oil

salt and pepper

200g Feta

  1. Half the olives and break the feta into chunks. Toss the tomatoes, cucumber, olive halves, feta chunks and the snack lettuces into a large serving bowl.
  2. Whisk the oil with the lemon juice and seasoning.
  3. Gently toast your pitta in a griddle pan or a toaster.
  4. Drizzle the dressing over the salad and toss well.
  5. Serve with warm pittas.
