Greek Feta and Griddled Pitta Salad

12 cherry tomatoes, halved
1/2 cucumber, sliced
50g pitted black olives
4 pitta breads
juice of 1/2 lemon
2 tbsp extra virgin olive oil
salt and pepper
200g Feta
- Half the olives and break the feta into chunks. Toss the tomatoes, cucumber, olive halves, feta chunks and the snack lettuces into a large serving bowl.
- Whisk the oil with the lemon juice and seasoning.
- Gently toast your pitta in a griddle pan or a toaster.
- Drizzle the dressing over the salad and toss well.
- Serve with warm pittas.
