Salt & Pepper
- Heat 1/2 tbsp of butter and a drizzle of oil in a large pan over medium heat. Once the butter has melted and the pan is hot, add the kale and cook for 1-2 minutes until the kale has wilted.
- In a large bowl, mix the wilted kale with the mashed potatoes. Season with salt and pepper.
- Re-heat the large pan over medium-high heat with remaining 1/2 tbsp butter and a little more oil. Once butter has melted and is bubbling, spoon the mash mixture into the pan, spreading out in an even layer. Tip: If you don't have a very large pan, you can use two smaller ones instead.
- Fry the mash until the edges start to brown, for about 5-7 minutes.
- Melt the remining 1 tbsp butter in a small bowl in the microwave.
- If your pan is oven-proof, simply rough up the surface of the mash then brush it with the melted butter. Otherwise, spoon the mixture into a large baking dish, spreading it out in an even layer. Then using a fork, rough up the top of the mash and top with the melted butter.
- Place it under the grill until golden brown, for about 5 minutes.
- Remove the dish from the oven and sprinkle roughly broken pieces of bacon on top.
- Serve bubble and squeak with a poached egg, seasoned with a bit of salt or pepper.
When divided into 4 portions this recipe provides approximately 31g of carbs, 27g of fat, 22g of protein and 451kcal.
