Air Fryer Salmon with Pak Choi

1.5 tbsp honey

2 Salmon Fillets

4 tbsp soy sauce

2 tbsp mirin

2 tsp sesame oil

1 tsp toasted mixed seeds

Salt

  1. For the salmon, mix together the soy sauce, honey and mirin in a small bowl. Reserve 2 tbsp of the mixture in a small bowl for dressing.
  2. Place the salmon fillets in a small dish and pour over the marinade. Turn the fillets in the marinade to coat, then loosely cover and leave to sit at room temperature for 10 minutes.
  3. While salmon is marinating, pre-heat air fryer to 190°C. Lightly coat the fry basket with a bit of cooking spray or oil, then place the marinated salmon in the basket.
  4. Cook until the salmon is cooked through, for 7-8 minutes. Transfer the salmon to a plate and loosely cover with tinfoil to keep warm.
  5. Once salmon is cooking, rinse the pak choi and cut in halves lengthways. Toss the pak choi with the sesame oil and a light seasoning of salt. Set aside until salmon is cooked.
  6. Once salmon is resting, arrange the pak choi in a single layer in the air fryer basket. Cook at 190°C until the leaves are crispy and charred and the stem is just tender, for 5-6 minutes.
  7. Arrange the cooked pak choi and salmon on serving plates, and then drizzle over the reserved soy marinade over the salmon and pak choi. Sprinkle toasted seeds over the salmon to finish.

This recipe serves two people, with each portion approximately containing 22g of protein, 22.5g of fat, 24g of carbs and 431.5 kcal.
